Peach and Avocado Summer Salad
It has been a bumper year for Passionfruit in Northland and this Avocado and Peach salad drizzled with passionfruit dressing is to die for. The creaminess of the avocado & sweetness of the peach work together perfectly with the tart passionfruit. These ugly beautiful fruits are tart but sweet & a wonderful tropical flavour to add to smoothies, ice cream, yoghurt & passionfruit curd. This simple salad lets the dressing shine through
as it is the star of the dish. Get in those last tastes of summer kiwis,
as autumn is knocking on the door.

AVOCADO AND PEACH SUMMER SALAD RECIPE

PASSIONFRUIT DRESSING
Makes 250ml (enough for a couple of salads)
Gather your ingredients and measure the following straight into a jar:
2 passionfruit, pulp scooped out
1 tsp runny honey
1 heaped tsp stoneground mustard
zest and juice of 1 lemon
2 T apple cider vinegar
200 ml extra virgin olive oil
1 T virgin sesame oil
1 tsp salt
a few cracks of pepper
Secure lid to jar and shake vigourously until well mixed, check for seasoning. For the salad:
½ a fancy lettuce
1 peach, remove stone and slice into eights
2 avocados, halved and pip removed
Arrange in a salad bowl and drizzle all liberally with the dressing.
